Homemade Weekend Eats

 Happy Monday! Are you ready for the week ahead? I never am. But I did read a lot of inspirational quotes this weekend so I'm going to let those mull around in my brain while I buckle down at work today- a little faux-excitement never hurt anyone!

So as you know, I've been drastically changing my life in order to lose some weight. While I stick to a strict mapped-out diet Monday-Friday, I ingest a weeee bit more calories on the weekend (and off-set it with my caloric intake during the weekdays). Anyhow, since I've been putting so much thought into my food, it was inevitable that I'd turn it into a post eventually.

Every morning I have a Smoothie. This is consistent with the weekdays- I have one of these every day a week. Not only are they insanely yummy, but they're full of nutrients and help me get my fill of Fruits and Veggies. They are ALWAYS comprised of the following: Huge serving of Spinach, 2-3 Servings of Fruits (Usually pick 2 or 3 of the following: Mangoes, Blueberries, Pears, Peaches, Strawberries, Bananas, Raspberries, Kiwis), Basil, Flax Seed, Yogurt and sometimes some Whey Protein and Wheatgrass.

So usually I would just have a Smoothie for Breakfast but because it was the weekend and Brunch is basically mandated by the State, instead of having a full smoothie- I had a mid-morning Lunch/Breakfast delight of: Half a Smoothie, Coffee, Scrambled Eggs with multiple Veggies (made by my BF) over Dave's Killer Low-Cal Bread. It was so delicious and so full of protein that I felt full all day.
Weekend Dinner: God Bless the Crock Pot
Luckily for me, on Sundays the Boy tends to make a Crock Pot in the morning. So after a day of working-out, cleaning and Laundry (aka GCL) my famished self got to enjoy a Mexican medley of pulled Chicken, Avocado, Shredded Cheese, Onion and Parsley with Enchilada Sauce. To say that I liked it would be the equivalent of stating that I 'like' lipstick. No, no... I LOVE this dinner. All kinds of yum.

So there you have it: a weekend day in the life of my food (keep in mind that I'm up about 10:30 AM on weekends as opposed to 6 AM so I really only need 2 meals on the weekends, in contrast to 3 on Weekdays) I'm hoping to put a post up soon of my weekday meals, they are carefully mapped and plotted out as I plan on wearing a bikini this summer and not be mistaken for Keiko's Fat Cousin.

Swoon! Everything looks incredible. I'm one of those people who makes nothing but toast or coffee for myself {yet I will make full meals for everyone else}, so I never eat foods that look this fabulous.

P.S. Should I invest in a Crock Pot? It seems like everyone is always making amazing things in them! :)

I am on a better eating plan starting today as well. I have been hibernating and this is not good for my waistline....argh.

Looks like a grand dish there at the end, also eat nothing but good food now too, isn't so hard when you get used to it.

What kind of workouts do you do?

i.e. situps, pushups, running, etc? What works best for you?

All of the ingredients for your smoothies are delicious. I'm somewhat embarrassed, being an ovo-lacto vegetarian, to admit that I only buy delicious fresh fruits (or fresh green vegetables) on rare occasion, being exceedingly lazy even though I love all of them. What kind of blender, juicer or food processor do you use to make those delicious smoothies? I've thought of making my diet more healthy (less eggs, cheese and chemicals). Except for the chicken the rest of the CrockPot meal sounds good. I'm eating a microwaved frozen Amy's Macaroni and Soy Cheez while reading this.
It's great that you're being so healthy. Don't get too carried away with that diet stuff though - curves are in and the skeleton look is out (some of those fossilized fashion designers need to wake up) :)

Yummo! Still soooo healthy and looks delicious. Can't wait to see what you eat on the weekdays, i'm currently grabbing healthy food inspiration from everywhere as I've decided to quit sugar again.

@Mrs. Poustie- thanks for the question! At this point as I'm trying to lose weight- I do Cardio for about 45-60 minutes 4-5 days a week. Say I have 5 days of exercise: 2 days would be the Elliptical, 1 day would be a Spinning class, 1 day would be outside jogging and 1 day would be half elliptical/half treadmill (60/40).

I cap each day of cardio off with 4 sets/12 reps of weight machines based on what I'm focusing on that day (ie arms, legs, chest, etc.) and I finish every workout with 3 reps of an ab-based workout. Plus I usually do 10 pushups every commercial break for 1 show.

I find all of the above to be the fastest way for me personally to lose weight.

Once I'm at my goal weight- I will cut down my cardio a bit and focus more on strength training as a focal point. But I'm not there yet right now.

@Panty Buns- haha, thank you for the tip! Trust me, I would never be a skeleton- ever. And I word it wrong when i say "diet"- I really do just mean making smart choices with my food and being aware of what I'm eating, I promise!!

You sound like a really healthy eater! The fresher the better.

I look forward to your weekday meal post; I need some fresh ideas as eating leftovers every day is getting very, very dull and boring. And would you also share some of your favorite smoothie recipes? I've never done smoothies but would like to start trying them. Thanks dear!!

@Lindsey: Thanks Lindsey! Yeah, I will definitely try to do a better Smoothie post because they've been so good. But it's really just a matter of throwing stuff in :) But I will do it! Perhaps set it up this weekend- they're so good!

Yay for smoothies! It's been so much fun to experiment with them more. I'm in a wedding in May and I'd love to drop JUST A FEW lbs and tone up my upper body since I'll be in a strapless dress. Fitness is so hard! *whines*
